I know that this post belongs to the category of "recipe", but actually it's a cooking tip. A useful tip that will help you save time in the kitchen.
You know that one of the bases of Spanish cuisine is the combination of garlic and parsley. A successful binomial which gives so much flavor to our dishes. Sometimes is annoying to chop them, so that's why I preparea big jar of this garlic parsley olive oil mixture in advance so as to always have it on hand.
It's very simple: Put a large bunch of fresh parsley in the blender. Add the cloves of garlic. How many? well, it depends. Make the decision according to your taste. Pour in olive oil until covered the parsley and the garlic, and mix well in the blender. You'll obtain a thickish green oil with traces of garlic and parsley.
Put this oil in a large mason jar and store it in the fridge. It keeps perfectly for weeks and even months.
What do I use it for? I use it as a base for many dishes such as "Fideuà" (HERE). Using this mixture raw it gives a final special touch to pasta and rice dishes. I t can be brushed on chicken, brochettes or grilled meat, or used as a marinate.
