receta: crêpe de pimiento morrón rellena de pollo en velouté


Me encantan las crêpes. Siempre me han gustado. Creo que fue una de las primeras cosas que empecé a cocinar de pequeña cuando mi madre me dejaba. Nota al margen: en esos tiempos mi madre tenía que venir detrás de mi con una brigada de limpieza porque parece ser que encontraba masa de crêpes hasta en el techo. Ahora con unos cuantos añitos más he depurado mi técnica y la verdad es que no tan sólo son fáciles de preparar sino que además dan muchísimo juego tanto en dulce como en salado.

I've always loved crêpes. I think that they are one of the first things I cooked when I was a child and my mother allowed me  into the kitchen. I remember my mother cleaning the kitchen after my "culinary actions" and how she complained about my poor skills and wondered how could there be crêpe's batter on the ceiling. Now my technique is more refined and I love to prepare crepes, either the sweet or salty versions.

Let's see the salty ones...






INGREDIENTES:

para las crepes:

125 gr de harina
250 ml de leche
2 huevos
sal
1 latita de pimiento morrón

para el relleno:

solomillos de pollo
1 puerro grande
1 diente de ajo
30 gr de mantequilla
3 cucharadas de harina
caldo de pollo
aceite de oliva
pimienta negra
sal

PROCEDIMIENTO:

Crepes:
  • Poner todos los ingredientes en la batidora incluido el pimiento y batir muy bien.
  • Engrasar bien con mantequilla una sartén ancha  y cuando esté caliente verter la cantidad suficiente de masa para que quede una capa fina que recubra todo el fondo de la sartén (aprox. 200ml). Inclinar un poco la sartén para que quede todo el fondo bien cubierto.
  • Cuajar por ambos lados y reservar.

Relleno:
  • Poner a pochar un puerro cortado en aros y el diente de ajo en daditos en una sartén con aceite de oliva y una pizca de sal.
  • Cuando esté bien blandito añadir el pollo cortado en daditos, espolvorear con abundante pimienta negra y dorar. 
  • Cuando esté doradito retirar del fuego y reservar.
  • En la misma sartén fundir la mantequilla, añadir la harina y rehogar bien para que la salsa no sepa a harina cruda.
  • Ir añadiendo caldo de pollo removiendo bien hasta conseguir una buena velouté. (unos 10-15 minutos)
  • Cuando este bien espesita añadir el pollo con el puerro y dejar cocer juntos durante unos minutos (2-3).
Montaje:
  • Rellenar cada una de las crepes con el pollo y servir bien caliente.

INGREDIENTS:

for the crêpes:

125 gr  flour

1 small can of red sweet  peppers

for the filling:

chicken breasts
1 large leek
1 clove of garlic
30 gr butter
3 tablespoons flour
chicken broth
olive oil
black pepper
salt

DIRECTIONS:

to make the crêpes:
  • put all the ingredients including the red peppers in a mixing bowl and whisk together until you get a thick batter.
  • heat a large pan, melt some butter and pour in aprox. 200ml of the batter.
  • Tilt the pan with a circular motion so that the batters coats the surface well.
  • Cook the crêpe well on both sides and set aside.

to make the filling:
  • sweat sliced leek and a diced clove of garlic in a saucepan with olive oil.
  • when they are well cooked add the chicken cut in chunks, season with black pepper to taste and cook until golden.
  • Remove from the heat and set aside.
  • In the same pan melt the butter and add 3 tablespoons of flour. Cook well to avoid that the sauce tastes like raw flour.
  • Add the chicken broth little by little whisking well  until you get a good velouté
  • Add the chicken and cook together for 2-3 minutes
Stuff the crepe with this filling and serve hot.

  2. Dev'essere buonissima.. La storia di tua mamma che ti seguiva con un cencio perché lasciavi crêpes dappertutto è stupenda.. Ti immagino già tan flamenca anche da piccolina!!!

Boníssimes les creps, tant les dolces com les salades, i un detall que em va subtar cuant vaig viatjar per la Bretanya francesa, a on es mengen unes crepes boníssimes, i es que les que fan "dolces" que porten melmelades, confitures, etc. Les fan amb farina de blat, i en cambi les que porten components "salats" (pollastre, verdures, peix, etc.) les fan amb farines integrals.
